Paleo Coconut Shrimp

Here is the Coconut Shrimp recipe I have promised a few people. Sorry it has taken me so long to post…I am slooow!

24 raw shrimp (41-50 count/pound) or 12 large prawns. Strips of chicken or turkey can be substituted.
1 cup unsweetened coconut flakes
1/2 cup almond flour (I found this at Kroger on the one aisle they have for health foods)
1/4 tsp salt
2 eggs
1/4 – 1 cup organic virgin coconut oil for frying (again at Kroger on the same health food aisle)

Directions:
De-vein and peel shrimp, leave tails on. Combine coconut in a bowl with almond flour and salt. If the coconut flakes are fairly large, consider throwing them in the food processor for a minute for a smoother texture. Whisk eggs in a separate bowl. Dip shrimp in egg then the coconut mixture so each shrimp is well covered. Starting with 1/4 cup, heat the coconut oil in a pan. Drop a pinch of coconut into the pat – if it sizzles, oil is hot enough. Make sure oil is hot!

Fry the shrimp in batches until the outside is browned, about 3-5 minutes/side. If the oil becomes dark and/or starts to smoke, clean out the pan and start with fresh oil. Best when served immediately.

Superbowl Challenge…

Ok, so Steve and I are having a Superbowl party at our house and you all are invited (even if you’re rooting for the wrong team). Of course this will be a Paleo party, well…with the exception of the alcohol/beer. So, the challenge is that everyone coming needs to bring a Paleo friendly dish. There are lots of internet resources for recipes, so seek out something yummy. Not sure what our dish will be yet but I’m sure Steve will think of something!
Bring your beverages, bring your food, bring yourself but RSVP so I’ll know how many are coming.
At half time we’ll do Murph.
hahaha!! Just kidding!
Oh, and one more thing….GO COLTS! GO PEYTON…YOU ARE AWESOME!!

I know…

I haven’t posted in a while! I’ve been crazy busy lately!
Some exciting things coming up though!
Grand Opening is January 30, so everyone make plans to come out and participate in the activities of the day!
March 20 – 21, I am planning on attending a Kettle Bell Certification course in Atlanta. I’ve been wanting to do this for a while now so I’m excited about going! I’ll learn new exercises with the kettle bells so we can incorporate more KB’s in our WOD’s! yay!
April 10 – 11, we are hosting a CrossFit Endurance Certification class.
You will spend 2 full days with one of the CrossFit Endurance staff learning, studying, and applying the principles of CrossFit Endurance. You will learn how CrossFit Endurance works for endurance athletes and CrossFit athletes. You will learn how to apply and progress training at an individual and group level. You will also learn basic mechanics of running essentials.

The Results…

If you’re looking for times here…wrong place. However, you can find everyone’s times at www.stjudemarathon.org and go to ‘results’ in the left column.
What you will find here is total respect for the runners…all 50 million of them! Ok, so maybe it wasn’t 50 million, but it was a lot! If you have never experienced the St. Jude marathon/half marathon/5K, then I strongly suggest you put it on your bucket list. This was one of the greatest experiences I’ve ever had. The love this city has for St. Jude and the children is unmatched by anything I can possibly think of. We are a blessed city to have such a wonderful place in our back yard, with the outpouring of support by Memphis to these children, doctors, nurses and their families. The support we received as runners was a beautiful thing as well. The city really reached out, and for once, I was proud to live here. I can honestly say I was moved to tears on more than one occasion (and this was before I hit “the wall”)!
Steve and Cody, you guys rock! You endured a start time of 7:15 a.m. and it was sooo cold I know you had trouble breathing. You guys had a lot to have to endure on your run, the masses alone were exhausting. There were 4,000 participants without a staggered start, so working y’alls way through that crowd was a feat in itself! Great job guys!! Y’all are troopers!!
Jennifer, you are a great inspiration and an extremely consistent runner. You kept me going through that first half and finished the 13.1 with me in your dust and knocked 12 minutes off of your last years time! You rock and inspire more than you know! Don’t ever let anyone make you think you aren’t top notch girl!!!
Michelle, you are such an outstanding athlete! Your running skills proved themselves once more! Great job on your first marathon, girl! You got your 26.2 and earned every step of it! Way to hang in there and give it all you had!
Carole and Mike, y’all do these crazy long distance runs often and until now, I had no idea (and still probably don’t have a full idea) of what a distance runner goes through. You guys are nuts! You are most excellent at what you do and if I were a distance runner, I would want to be just like y’all!! Congratulations on another 26.2!! I can only imagine how many total miles y’all have run; I give y’all total props for every step of them! Mike, I know you had to endure some pain along the way this weekend, and that made this run even more meaningful when you can complete it with a body that is struggling! As for me, well…I finished and I couldn’t be happier with my time. For the amount of training that I did (4 long runs, I think) I really couldn’t expect anything more of myself. I was proud to run beside Jen for the first half, and then finished the second half on my own. It was pretty rough at times to say the least. I never wanted to quit or give up but I had some aches that started at mile 15 and once I started aching, that’s all I seemed to be able to focus on. Fortunately, I had my old roller derby friends at mile 18 and that got me through a little further. Just when I hit “the wall” again, to my surprise there was my husband and Jen at mile 23. What a tremendous feeling! I could push through a little more, even though my body continued to argue with me. I was determined to finish! Approaching that finish line was a very emotional moment for me; unfortunately, I had no fluids left in me to cry out! I am so happy to have crossed that line and completed a marathon!
Sometimes it’s not about hitting a PR…It’s about the journey we take. I can honestly say that this was not only one of the most difficult journeys I have ever been on, but also one of the most personally rewarding. I got my checkmark on my bucket list, my 26.2 sticker on my car, my ‘marathon finisher’ medal around my neck, and a bond with a bunch of other crazies that can never be broken…and that’s good enough for me.

St. Jude Run!!

Tomorrow some of our fellow crossfitters will be running for St. Jude.
Steve and Cody will be smokin through the Grizzley House 5K, Jennifer will be running the half marathon and will be crushing last years time I am sure! Carole, Mike, Michelle and I will be tackling the full marathon. This will be mine and Michelle’s first! Carole and Mike have put hundreds of miles under their feet but I can imagine that each time brings a new experience! I am sooo excited for everyone! I won’t say good luck because I don’t believe in luck, I believe hard work makes things happen and all of us have worked super hard in the gym, so I know they payout will be awesome!
Have fun and I can’t wait to see everyone at the finish!

A Paleo Holiday Treat

Yay for one of my bff’s Carla for making these cookies!! She is always looking out for my Paleo needs as well as my need to still enjoy food!
These totally pass my tastebud test!

Macaroons
———
1 7-ounce bag shredded unsweetened coconut (2 2/3 cups)
1 cup sliced raw almonds
1/4 cup raw honey
4 large egg whites

1. Preheat oven to 325 degrees F. Grease 2 large cookie sheets. Into
large bowl, measure coconut, almonds, and honey. With spoon, mix until combined. Stir in egg whites until well blended.
2. Drop mixture by heaping tablespoons, about 2 inches apart, on cookie sheets. Place cookie sheets on 2 oven racks. Bake cookies 20 to 25 minutes until golden, rotating cookie sheets between upper and lower racks halfway through baking time. With pancake turner, remove cookies to wire racks to cool completely. Store cookies in tightly covered container.
Yields: About 1 1/2 dozen

Something to try…

Are you trying to follow the Paleo diet and doing your part to be gluten free? I am, but as I learn more about glutens and where those little critters are found, I find myself pretty saddened by the idea of omitting pizza and beer from my list on my “cheat” day…because of course, glutens are found in abundance in both! What to do, what to do… Well, I recently learned of a pretty dang good substitution! Check it out:

So here’s how it works:
As we all know, a marquarita has a ton of sugar in the mix, so CrossFit NorCal came up with this solution to eliminate the spike in insulin.
shot of tequile (they recommend gold variey)
lime juice from half a lime
club soda
The first time I tried this I was at Los Pilares in Bartlett, the language barrier prevented this from being a good experience as they filled a large glass with club soda and a shot of tequila got pretty lost in there. Not yummy, however…we did get it perfected a bit. The key is to use a short glass, shot of tequila, top it off with a spash of club soda and juice from half a lime. You could substitue Sprite 0 for the club soda too. The lime juice actually blocks the insulin response so you won’t get that spike. Its pretty good, give it a try!
Ok, so nachos!!
Corn tortilla chips (there is some gluten, but its differnt that what you find in other flours)
layer with the following:
black beans (I know these are a Paleo no no, but remember, this is CHEAT DAY)
sliced black olives
goat cheese
jalapenos
avacado
salsa
Bake at 350 for about 15 minutes or until the cheese gets a little soft. We ate these as a side dish but if you added some cooked chicken, ground turkey or ground beef, it would hearty it up some. Also, my chips got a little soggy, so you might want to bake them a little first just to crisp them up some.
Good stuff and my intestines were much happier with this choice. I’m sure at some point I will have some beer and pizza though….just sayin.
