Something to try…
Are you trying to follow the Paleo diet and doing your part to be gluten free? I am, but as I learn more about glutens and where those little critters are found, I find myself pretty saddened by the idea of omitting pizza and beer from my list on my “cheat” day…because of course, glutens are found in abundance in both! What to do, what to do… Well, I recently learned of a pretty dang good substitution! Check it out:
Marquaritas and Nachos!! yay!!
So here’s how it works:
As we all know, a marquarita has a ton of sugar in the mix, so CrossFit NorCal came up with this solution to eliminate the spike in insulin.
shot of tequile (they recommend gold variey)
lime juice from half a lime
club soda
The first time I tried this I was at Los Pilares in Bartlett, the language barrier prevented this from being a good experience as they filled a large glass with club soda and a shot of tequila got pretty lost in there. Not yummy, however…we did get it perfected a bit. The key is to use a short glass, shot of tequila, top it off with a spash of club soda and juice from half a lime. You could substitue Sprite 0 for the club soda too. The lime juice actually blocks the insulin response so you won’t get that spike. Its pretty good, give it a try!
Ok, so nachos!!
Corn tortilla chips (there is some gluten, but its differnt that what you find in other flours)
layer with the following:
black beans (I know these are a Paleo no no, but remember, this is CHEAT DAY)
sliced black olives
goat cheese
jalapenos
avacado
salsa
Bake at 350 for about 15 minutes or until the cheese gets a little soft. We ate these as a side dish but if you added some cooked chicken, ground turkey or ground beef, it would hearty it up some. Also, my chips got a little soggy, so you might want to bake them a little first just to crisp them up some.
Good stuff and my intestines were much happier with this choice. I’m sure at some point I will have some beer and pizza though….just sayin.
